3 cups all-purpose flour
3 tbsps. sugar
6 tsps. baking powder
3/4 tsp. salt
3 beaten eggs
3 cups milk
6 tbsps. vegetable/canola oil
1 stick butter, melted(optional)
(Makes approx. 30-32 pancakes)
1.) Preheat electric griddle or cast iron skillet(if using cast iron skillet, keep it well buttered throughout to prevent sticking).
2.) Mix all dry ingredients together in one bowl. In separate bowl, mix together wet ingredients.
3.)Then add wet ingredients to dry ingredients and stir together, just until moistened. Add melted butter if desired. Fold into batter. It’s ok if batter has some lumps.
4.) Pour by ladle fulls onto griddle or skillet. Cook a few minutes on each sides until golden brown.
*Note: Any extra pancakes can be put into a plastic freezer bag and frozen for later use.
